Kaak is a traditional Persian sweet and souvenir of Kermanshah and Shiraz cities. In Shiraz, Kaak is called Yukha and it is slightly different.

Kaak is made of very thin dough layers and it is light, delicious and energetic. For cooking Kaak, there is an instruction about which we will talk below.

Ingredients

[icon name=”check-circle” class=”” unprefixed_class=””] Warm water (50 ml)

[icon name=”check-circle” class=”” unprefixed_class=””] Animal or solid oil (50 g)

[icon name=”check-circle” class=”” unprefixed_class=””] Instant paste (1 teaspoon)

[icon name=”check-circle” class=”” unprefixed_class=””] Salt (1/2 teaspoonful)

[icon name=”check-circle” class=”” unprefixed_class=””] Sugar powder (160 g)

How to prepare?

First, mix the instant paste with a tablespoon of sugar powder and 1/4 cup of warm water in a dish, then leave it for 10 minutes until it puffs up. Then, melt the oil into another dish and leave it cool slightly. Then break the egg and add half of it with salt in a little glass and add oil. Add the prepared dough to the mixture of oil and egg gradually then continue to stir. Next, add the flour and make it so that the paste is smooth and without stickiness. Spread dough for 10 to 15 minutes.

Then cover it and let it rest for 2 hours. If the dough was loose, you can add some flour to adjust its stiffness. chop the prepared dough in equal size and open the slices with a roller and thinner them. Then put the slices of paste on a tray and cook them on both sides. Spread the slices on a board and before they have become cool completely, sprinkle mix of jam, sugar powder and almond powder. Then make the cooked sweets like cylinder and press them with a decent push. At the end, cut the Kaaks in 3 centimeter-slices in an oblique manner.
